Alright. So October wasn't the great month I thought it would be. I actually did really well through Thanksgiving. I lost weight that weekend. Around October 25th Jordan and I both ended up with the flu. There is nothing that makes you feel better when you're sick than carbs. Really, when you're not feeling well and you barely want to eat as it is, the thought of meat, cheese and veggies just really turns you off.
Enter Croissants and Orange Juice! Yummm. So that just leads to days of eating WHATEVER you want. Honestly, it was really bad. I can't even list off everything I ate that week...but it was GOOD. So I think that the week off set me back about 5 pounds.
I got back on the horse and really strict with myself on November 4th. And I've lost that weight and then some.

Current Weight: 179.00
Total Weight Loss: 21 pounds
Maybe I'm just trying to justify my slip ups, but 21 pounds in under 3 months? I've NEVER done that before. So really, if I take some time off because I'm just in a funk or I'm really bored with food I don't see it as a problem. One thing that the week off reminded me was that I really do FEEL better on Atkins. I don't plan on having any more breaks until Christmas. I can avoid all the yummy Starbucks Christmas drinks for most of the season, but I'm having my salted caramel hot chocolate and my Peppermint Mocha at some point this year. :)
I've also started at a gym. More on that later.

Week 5 Weigh in!
Hello everyone!
So this weekend was a dreaded food filled holiday. I give thanks for losing weight even with the food in front of me! :)
Start Weight: 200.0
Current Weight: 183.0
Total Weight Loss: 17.0
YAY! I can't believe how fast the 80's are falling off. I went to a GAP outlet store this weekend and was able to buy a pair of jeans a size smaller than usual! Plus I haven't owned GAP jeans in a LONG time because of the price, but outlets are always awesome.
Saturday is measurement day and I'll try and remember to post about my inches.

It's been awhile
Hello! La-La-La!
So I'm back. I haven't been updatting as much because...well...once the weightloss slows down it's just not as exciting or fantastical and so I didn't feel like doing it. ok? I'm just being a brat.
Here are some updates! I'm just going to go with this morning's weigh in cause I haven't been paying too close attention to the scale these days!
Also seeing as today is the 9th and I started on the 9th it's a month weigh in, how about that?
Start Weight: 200.00
Current Weight: 185.8
Total Weight Loss: 14.2 pounds.
Not too shabby! I'm pretty sure that I'm also down around 6 inches. I'm losing about 2 inches a week. Tomorrow is my measurement day, so it will probably (hopefully) be more. :)

Atkins Pumpkin Cookies
Ok, here's the pumpkin cookie recipe that I got from the Atkins forum. I changed it a bit to make it work best for me. The first batch I did were pretty gross!
1/2 cup of butter warmed
1/2 cup of flax flour
5 tsps of liquid sugar twin
mix together and then add
2 cups of pure pumpkin. (You get it canned but make sure it's not the pie filling that has added sugar and spices )
1 tsp baking powder
1 egg
1 additional cup of flax flour
1 tablespoon of cinnamon.
I was making it up as I went along so in the end I added a bit more pumpkin to fix the consistency. Didn't measure it....but it should look like regular cookie dough.
Place small drops on a baking sheet (should make about 35 cookies) and use a wet fork to flatten them down. The first time I did it I didn't flatten them and they baked up weird.
Bake at 400 for 30 minutes. May take less if you have a good oven...i don't. The insides stay soft, almost like they're not cooked, but they dry out a bit by the next day and have a pretty good consistency.
It's a trial and error recipe for sure!

Pizza Casserole
That's what we had for dinner last night. I've been craving pizza and tried to come up with an Atkins friendly crust, but I just gave up on that and did this instead. :) I made it in a glass casserole dish, but you could use a cake pan if you want.
Create a layer of each of the following Items
Start with a layer of tomatoes
grated cheese
pepperoni
green pepper
mushrooms
onion
another layer of tomatoes
and lastly a layer of fresh mozzarella
Sprinkle on garlic powder and Italian seasonings
Bake at 400 for 20 minutes. Obviously you can change ingredients based on what you have or what you prefer. It's a bit soupy because of the tomatoes. I was going to use pizza sauce but it has added sugar. Just use a serving spoon with holes in it.

Official Week #2 weigh in
So today is the end of the 2nd week on Atkins. I was very good and kept the scale hidden the whole week. Here is the good news!
Start Weight: 200.0
Week 1 Weight: 192 (lost 8 pounds)
Week 2 Weight: 188.8 (lost 3.2 pounds)
Total Weight loss = 11.2 pounds.
I was so excited this morning when I read that! I haven't broken the 190's ever in my weight loss. The last time I was in the 180's was when I first moved to Waterloo in 2005-2006.
One thing about last week though. I didn't keep as good tabs on myself as I should have. This is the week where I'm supposed to move up to the next level, but I'm going to stay here for at least one more week to really nail down the basics.
1) I didn't write down my days food or carb count
2) I more or less estimated in my head what my carbs were (can't be accurate!)
3) I didn't get all my water in everyday
The reason I slacked is because when I see something working my brain says, "oh yah, you know what you're doing...you've got this!" So I need to tell that part to shut up and realize that one week doesn't fix years of problems.

Measurements!
Hey everyone!
So today was my measurements day. I'm not going to give you the breakdown, but I will tell you that I lost 2.75 inches in total. I'm not 100 percent sure of these results only cause it's hard to tell if I measured exactly the same places as last week and but I'm pretty confident.
It says that I lost an inch around my arms and that may sound ridiculous, but I have noticed the most difference so far in my arm. The muscles seem more defined because they don't have the extra cushion :) SO I'm going to take that as true.
I've been really busy this week. I have classes on Monday and Tuesday nights on top of working full time and trying to plan meals. I've been having a lot of fun with dinners but I'm having a really hard time getting inspired for lunches. I don't know how many more tuna salads I'm going to be able to stomach. :(
Also, If you're looking to make dinners and don't have a huge budget for ingredients I have 2 suggestions.
#1: Find a grocery store near you that discounts meat that's almost at the expiry date. We have a grocery store right across the street from us (Metro) but it's pretty expensive for meat there. We happened to be at the grocery store in the mall up the street from us and noticed the past few weeks that meat there is discounted by 50% if it's almost up.
Today we got a 3 pack of pork chop, a pork roast, 2 packages of prime chicken, 2 packages of porkchops that are packaged with spices all for $19.00. We just freeze it anyway so it's a lifesaver for us.
#2 Buy a spice rack. There are tons of spice racks you can get with the spices already in it. We had a bunch of spices in the resealable packets that were just in the cupboard. Out of sight out of mind. So we bought a rack for the counter and filled the containers with what we already had. It makes all the difference to cook with the spices....more experimenting and less boring meals.
Ok, I'm really just procrastinating here. I'm supposed to be going to the school to study. So let me know in the comments what you do to cut costs and make your meals exciting!
